Apple & Parsnip Soup

Ingredients
• 2 carrots (about 1/2 cup), peeled and sliced
• 2-3 parsnips [about 2 cups], peeled and sliced
• 1 apple, peeled, cored and chopped
• 1/2 sweet onion, chopped
• 2 garlic cloves, minced
• 1 tablespoon fresh ginger, peeled and minced
• 2 tablespoons olive oil
• 1 teaspoon salt
• 1/2 teaspoon nutmeg
• dash of ground cinnamon
• 2 cups chicken broth, low sodium – additional cups may be needed
