RAW SUMMER SALAD
BASIL SHALLOT VINAIGRETTE
INGREDIENTS
- 1 cup fresh basil leaves
- 3/4 cup extra virgin olive oil
- 1/4 cup white wine vinegar
- 2 tbsp maple syrup (or honey)
- 1 tsp spicy mustard
- 1/2 large shallot
- 1/2 tsp salt
- pepper to taste
PREPARATION
- Make the dressing by placing all ingredients in a blender or food processor and pureeing until smooth
FOR THE SALAD
INGREDIENTS
- 2 ears corn, kernels cut off cob
- 1 cucumber, thinly sliced
- 1 cup grape tomatoes, halved
- 1/2 red onion, minced
- 1/2 avocado, diced
PREPARATION
- Toss veggies in a bowl with the dressing, add pepper to taste, and serve
